Blueberry Pancakes
1 1/2 cup whole grain spelt flour
1 tbsp coconut blossom sugar
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp vanilla bean powder
pinch of salt
1 ripe banana, mashed
1 cup + 2 tbsp oat milk
1 tbsp coconut butter melted
1 cup blueberries
toppings of your choice (maple syrup, fruit, etc.)
Directions:
In a large bowl combine the flour, coconut blossom sugar, baking powder, vanilla bean powder, cinnamon and salt and mix together.
In a second bowl mix the mashed banana, oat milk and coconut butter.
Combine wet and dry ingredients, add the blueberries and gently stir together. Let sit for 10 minutes. In the meantime preheat a non-stick pan.
Pour equal portions into the pan and cook on medium-low heat until the edges start to brown and and bubbles are on top. Flip over and cook for another 1-2 minutes.
Enjoy with some maple syrup, fresh fruit or any other topping you like.
