Radish Toast With Butter, Cured Egg Yolk And Flaky Sea Salt

To Cure Egg Yolks:
Combine 3 parts kosher salt, with 2 parts sugar, mix well.
Crack eggs, separate yolks, nest them in the salt and sugar mix, and cover with sugar & salt. Refrigerate for at least 3 days. Best to use good eggs. When ready to use, grate yolks with a microplane grater.
