ingredients
- 2 cups cooked day-old jasmine rice
- 2 tablespoons vegetable oil
- 1 cup chopped kimchi
- 1 small chopped onion
- 3 cloves of minced garlic
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 chopped green onions
- 2 eggs
- to taste ground black pepper
- for garnish sliced green onions
- for garnish sriracha sauce
Method
Step 1
Prepare the Rice: Ensure your day-old rice is broken up into individual grains to prevent clumping when frying.
Step 2
Sauté Onion and Garlic: Heat the vegetable oil in a large pan or wok over medium-high heat. Add the diced onion and cook until soft and translucent, about 2-3 minutes. Add the minced garlic and sauté for another minute until fragrant.
Step 3
Add Kimchi: Stir in the chopped kimchi and fry for 2-3 minutes, allowing it to become slightly caramelized and aromatic.
Step 4
Fry the Rice: Add the day-old cooked rice to the pan, breaking up any clumps with a spatula. Fry together with the kimchi mixture, stirring occasionally, until the rice is well mixed and heated through, about 5 minutes.
Step 5
Season: Pour in the soy sauce and drizzle with sesame oil, mixing thoroughly. Season with ground black pepper to taste. Continue to stir-fry for an additional 2 minutes to combine all flavors.
Step 6
Cook Eggs: Push the rice to the side of your pan, crack the eggs into the pan, and scramble them before mixing with the rice.
Step 7
Combine and Garnish: Once the eggs are cooked and mixed with the rice, add the chopped green onions, and stir them into the rice just before serving.
Step 8
Serve: Spoon the kimchi fried rice into bowls. Top with additional sliced green onions for garnish and a drizzle of sriracha sauce for extra heat.
