ingredients

  • 14 ounces bok choy
  • 4 cloves garlic, minced
  • 1 fresh chile pepper, finely chopped
  • 1 tablespoon hoisin sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons neutral oil, for cooking
  • 1 tablespoon cornstarch, mixed
  • Salt, to taste

Method

  • Step 1

    Bring a pot of water to boil. Once the water is boiling, add a splash of oil and enough salt to taste. Prepare a large bowl with ice water.

  • Step 2

    Blanch the bok choy for about 2 minutes, quickly remove from the boiling water and soak in cold water to stop the cooking process.

  • Step 3

    Heat oil in a wok, sauté the garlic and chile until fragrant. Add the hoisin sauce, sesame oil, soy sauce, and cornstarch slurry. Cook until it begins to thicken. Serve bok choy with sauce drizzled over and enjoy immediately.
