Get dinner on the table in less than 30 minutes with this easy sheet pan Steak Potatoes & Broccoli. Boiled potatoes, steak and broccoli florets are season, brushed with oiled and baked in an oven for 10-15, flipping the steak half way. Once done, allow the steak to rest and serve these ingredients with a side of pesto. This one pan meal gives you a protein, starch and veggie from one pan.

ingredients

  • 2 cups baby potatoes, halved
  • 1 medium flank steak
  • 1 tablespoons olive oil
  • salt and pepper, to taste
  • 1 cup basil pesto, to serve

Method

  • Step 1

    Bring a large pot of water to a boil. par-boil the potatoes for 1-2 min, drain + set aside. tenderize the steak with a mallet. heat oven to broil (high).

  • Step 2

    Toss potatoes, broccoli florets and steak on a sheet pan in one even layer. drizzle w/ olive oil + season w/ salt + pepper. place in the oven for 10-15 minutes, flipping the steak at the half-way mark + giving the veggies a toss. it’s good practice to keep an eye on the oven during this process.

  • Step 3

    Once cooked through, let steak rest 5 min before slicing into strips + serving with pesto (optional)
