  • 3 eggs, room temperature
  • 180 grams sugar
  • 50 grams brown sugar
  • 80 grams dark chocolate
  • 60 grams cocoa powder
  • 130 grams butter, melted
  • 40 grams peanut butter (optional)
  • 80 grams flour

Method

  • Step 1

    Preheat the oven to 180°C (350°F). Grease and line a 22x22 cm baking pan with parchment paper.

  • Step 2

    In a large mixing bowl, combine the eggs, sugar, and brown sugar. Using an electric mixer, beat the mixture on high speed for about 5 minutes, or until it doubles in volume and becomes pale and fluffy.

  • Step 3

    Melt the butter in a small saucepan over low heat until it turns golden and aromatic. Remove from heat and stir in the dark chocolate, mixing until smooth. If using peanut butter, add it at this stage and mix until well incorporated.

  • Step 4

    Gently fold the melted chocolate mixture into the whipped eggs and sugar. Sift in the cocoa powder and flour, then fold everything together with a spatula until just combined. Be careful not to overmix.

  • Step 5

    Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 18-20 minutes, or until the edges are set but the center still appears slightly underbaked.

    Allow the brownies to cool in the pan until they reach the perfect fudgy consistency. For the best texture, let them sit for at least 30 minutes before slicing.
