Today, we’re making Gochujang Charred Leeks—a smoky, caramelized, umami-packed side dish that’s perfect for grilling season. I only had one leek, but trust me, you’ll want to make at least double the amount!

ingredients

  • 1 leek
  • 1 1/2 teaspoons gochujang
  • 1 tablespoon rice vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon roasted sesame oil
  • 1 teaspoon toasted sesame seeds

Method

  • Step 1

    Trim the root end and any tough dark greens off the leek. Slice it in half lengthwise and rinse well.

  • Step 2

    Heat a dry pan over medium-high heat (or fire up the grill). Place the leek cut-side down and cook until deeply charred, about 4-5 minutes. Flip and cook for another 3 minutes.

  • Step 3

    In a small bowl, mix gochujang, rice vinegar, sugar, and sesame oil until smooth.

  • Step 4

    Brush or drizzle the sauce over the charred leeks. Sprinkle with toasted sesame seeds and serve warm.
