If you're anything like me, you prefer to eat lighter meals in the summer. This includes more fish, poultry, and lots and lots of fresh vegetables! Don't get me wrong, I love a good cheeseburger and pulled pork sandwiches (they seem necessary for backyard BBQs!), but sometimes during the summer-especially during the week, I just want to eat something fresh and quick.

 

This week's menu features a few simple (but delicious!) seafood dishes, including crispy breaded haddock and this incredible sweet-and-spicy shrimp dish.

 

The remainder of the week features a BBQ pasta salad and other colorful summertime fares. Additionally, to honor Peruvian Independence Day (on Thursday), Feedfeed Food Editor @Andrealoretdemola has featured this mouthwatering Mushroom Ceviche recipe. MONDAY Roasted Cherry Tomatoes with Oven Baked Crispy Fish

TUESDAY Honey Harissa Grilled Shrimp

Shrimp are coated with honey before being quickly grilled or broiled, allowing the honey to caramelize and char slightly. Toss the grilled shrimp into a zesty marinade made with citrus juice and zest, fresh garlic, and a piquant harissa spice blend.

THURSDAY Lobster Mushroom Ceviche

A classic Peruvian ceviche made with dried mushrooms that are rehydrated to the full size, then gently cooked dashi with their soaking liquids. The mushrooms gave off a beautiful orange hue and lightly flavored the dashi. The leche de tigre in this recipe blends together scallions, ginger, aji amarillo, garlic, ginger, and miso.
