Lightly breaded and baked (not fried!) haddock is paired with dill and a smooth, yogurty-based tzatziki sauce. The pop of roasted tomatoes really brightens up the fish. Serve with a big pile of white basmati rice

ingredients

  • 2 Haddock fillets
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 teaspoons dill, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 12 cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2/3 cup basmati
  • 1 tablespoon butter
  • Tzatziki, to taste
  • Dill, fresh for garnish

Method

  • Step 1

    Pre-heat the oven at 400°F.

  • Step 2

    Mix the cherry tomatoes with the olive oil, salt and pepper. Place them on a baking sheet with parchment paper. And into the oven.

  • Step 3

    Mix the breadcrumbs, chopped dill, garlic powder and some salt and pepper. Pour the mix in a plate. In a bowl, whisk the egg.

  • Step 4

    Place the haddock in the egg, coat with breadcrumbs

  • Step 5

    Add the fillets to the baking sheet with with cherry tomatoes and let it cook for 20 to 30 minutes. At the 12 minutes, turn them with a kitchen clamp.

  • Step 6

    During this times, cook your basmati rice, about 1/3 cup dry per person.

  • Step 7

    Cook the basmati according to package directions. Once cooked, mix in the butter and salt and pepper.

  • Step 8

    Serve and enjoy!
