We're cooking with fruit on Tuesday and whipping up a Nectarine Salad that would be great with simple grilled chicken. On Wednesday, twirl to your heart’s content with easy Tomato and Zucchini Pasta. Making soup at the end of the week will ensure you have plenty of leftovers for the weekend. While this Corn Chowder recipe is vegan, feel free to add protein such as fish or chicken to the mix.
