This summery salad is the perfect main or side dish to whip up for any occasion. The salty cojita cheese pairs lovely alongside the sweetness of the nectarines (peaches also work great here!).

ingredients
- 3 cups sweet corn kernels
- 1/2 nectarine, sliced
- 2 cups green kale, packed
- 1/4 cup fresh mint leaves
- 1/2 cup cojita cheese, crumbled
- 1/2 cup snap peas
- 1/3 cup radish sprouts
- 2 tablespoons chives
- 1 avocado, sliced
- Sea salt & pepper
ingredients
Lemon Paprika Dressing
- Juice of 1 lemon
- 1 tablespoon avocado oil
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
Method
Step 1
Add all the ingredients to a bowl. In a separate bowl whisk together the ingredients for the dressing. Dress the salad and season to taste.
