  • 1 1/ 2 tablespoons oil
  • 1/ 2 cup onion, finely sliced
  • 1 (8 ounce) package tempeh
  • 1/ 4 cup barbecue sauce
  • 3 large carrots, thinly sliced
  • 1/ 2 head red cabbage, thinly sliced
  • 1/ 2 head green cabbage, thinly sliced
  • 2 tablespoons sesame seeds
  • 2 tablespoons pumpkin seeds
  • 1/ 2 cup tahini
  • 1 lime, juiced
  • 1/ 3 cup cilantro
  • 4 hamburger buns, whole wheat, toasted

Method

  • Step 1

    Heat oil in a medium skillet over medium-high. Sauté onion in until brown. Remove onion with a slotted spoon.

  • Step 2

    Sauté tempeh in 1 tablespoon heated oil until starts to brown. Add barbecue sauce. Heat a few more minutes. Add back onion.

  • Step 3

    Combine carrots, red cabbage, green cabbage, sesame seeds, and pumpkin seeds.

  • Step 4

    Blend tahini, 1/2 cup water, lime juice, cilantro and pinch of salt until smooth. Toss with slaw.

  • Step 5

    Load each bun with tempeh slices and slaw.
