"It’s not often that I believe a “healthier alternative” copycat treat could quite possibly match up to the real thing. So when I read about people claiming that dates taste just like Snickers when stuffed with peanut butter, chopped peanuts, and coated with chocolate and flaky salt, I felt it my duty to try it out and report back. And all I can is, the “WOW” reaction you see in this video is 100% authentic. When I bit into these Baby Snickers Stuffed Dates, I knew instantly that this recipe was going to become a staple in my family treat arsenal. Like, WOW, this is no joke! The chew of the caramelly, sticky date combined with thick and creamy peanut butter and a slight crunch of chopped peanuts, all wrapped up in a hard chocolate shell with the slightest salty finish is so spot on, that I’m not sure I’d pass a blind taste test. And that’s not an exaggeration - I had my nephews try and they weren’t totally sure right away which was which. Because these are so incredibly delicious, I wouldn’t even refer to these stuffed dates as a healthy alternative to Snickers. It doesn't do them enough justice. This treat deserves a place all its own at the dessert table, and you need to try them as soon as possible!"

Serves or Makes: 15 Baby Snickers Stuffed Dates

ingredients

  • 15 Medjool dates
  • 1/2 cup creamy peanut butter
  • 1/4 cup finely chopped roasted peanuts
  • 8 ounces chocolate melting wafers
  • 3/4 teaspoons coconut oil
  • Flaky salt, for topping

Method

  • Step 1

    Use a paring knife to cut one side of each date open. Gently pull apart and remove pits. Place prepared dates on a sheet pan or tray.

  • Step 2

    Add peanut butter to a piping bag. Fill each date with peanut butter. Sprinkle lightly with peanuts. Press dates closed with light-medium pressure.

  • Step 3

    Add chocolate wafers and coconut oil to a bowl. Microwave in 30-second intervals, stirring between each, until fully melted (about 2 minus). Pour melted chocolate into a wide-mouthed glass (a martini glass or cappuccino mug works well).

  • Step 4

    Line a separate sheet pan with parchment paper. Use long tweezers or a toothpick to dip each stuffed date and coat in chocolate. Allow excess chocolate to drip, and place each date on the parchment lined pan. Sprinkle dates with flaky salt. Chill in the freezer 15 minutes before serving so chocolate and peanut butter can set. Store in an airtight container in the refrigerator for up to two weeks.
