ingredients
- 1 tablespoon avocado oil
- 1/2 teaspoon cumin seeds
- pinch of hing
- 1 teaspoon ginger, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1/2 teaspoon turmeric
- pinch of cayenne, plus more for garnish
- 1 cup crushed tomatoes
- 3 cups yukon gold potatoes, peeled and chopped into large chunks
- 1 cup frozen peas
- cilantro, for garnish
- Kosher salt and pepper, as needed
Method
Step 1
In a large skillet on medium high heat, add the avocado oil and then add the cumin seeds and hing. Cook until the cumin seeds sizzle, about a minute.
Step 2
Add the ginger and saute until fragrant, about a minute. Next add the cumin, coriander, turmeric and cayenne. Cook for about 30 seconds.
Step 3
Add in crushed tomatoes and season with salt and pepper.Cook for 3-5 minutes. Then add the potatoes and enough water to just cover everything. Cover with a lid and cook on medium flame until the potatoes are nearly cooked through, about 8 minutes.
Step 4
Add in the frozen peas and stir to incorporate. Cook uncovered until the peas are done, 2-3 minutes. Season with more salt, if needed.
Step 5
Serve with roti or rice, top with cilantro and more cayenne. Enjoy!
