Rosé all day. Wouldn’t that be nice? 😉 But lets be honest, sometimes #momlife is too busy to even make dinner let alone sip on a refreshing beverage while you do it. . . Today I wanted aloo gobi, an Indian preparation of potatoes and cauliflower, but kiddo had soccer and it just wasn’t going to work. So I thought why not put all the ingredients into a roasting pan for a busy mama’s version? #genius #nahjustmakingitwork . . RECIPE Place one chopped head of cauliflower, 4-5 small quartered potatoes, two big handfuls of halved cherry tomatoes, a knob of grated ginger, 2 cloves of minced garlic, 1/2 a finely chopped onion, 2 teaspoons ground coriander, 3 teaspoons ground cumin, 1 teaspoon turmeric, pinch of cayenne, salt, pepper, and 3 tablespoons olive or coconut oil into a roasting dish. Toss well to combine. Roast at 425F for 40 minutes tossing the veggies at the midway mark. Top with fresh cilantro. OK, I’m going to stop saying I’m doing #whole30 because let’s be honest, wine on weekends, legumes, and a little dairy have all been happening. But I have been grain and sugar-free for 2 weeks now and feeling pretty great ???? . . Whatever plan or non-plan you’re on, these loaded sweet potato nachos are going to hit the spot, I promise. Perfect for #meatlessmonday and a messy kid’s meal, I am inhaling them as I type. . . RECIPE ????Steam sweet potato slices until tender. Sprinkle with a little coriander and cayenne. ????Warm cumin seeds in olive or avocado oil. Add chopped garlic and cook until just pink. Add baby spinach and cook until wilted. You know that moment when you take a bite of something, and it’s as if you’re instantly transported to a very specific moment in your childhood. And you feel warm and fuzzy inside. That happened to me today with this bowl of ‘patli palak’, literally translated ‘thin spinach’. More appropriate would perhaps be spinach soup? Regardless, it’s freakin delicious. . . RECIPE Steam about 4 cups of frozen spinach until softened. Blitz into a purée with a couple splashes of water into a soup like consistency. In a tablespoon of medium hot avocado oil or ghee, add 1/2 teaspoon cumin seeds, 4 minced cloves of garlic and one de-seeded green chili (optional). Just as the garlic turns pink, tip the spiced oil into the spinach and stir well. Add 1-2 tablespoons of tamarind paste and salt to taste. Inhale. Curry leaves & mustard seeds. If there was a spice match made in heaven, this would be it ?? . . In southern India, raw veggies are often tossed with mustard seeds and curry leaves tempered in oil with lime juice, chili, salt and a pinch of sugar. These zesty, bright and fresh accompaniments to traditional meals of lentils and veggies with roti or rice are called koshimbir. They are delightful even off the Indian plate as a complement to meat or fish or part of a #buddhabowl YUM! . . Moreover, curry leaves (not to be confused with curry powder) can enhance pancreatic health, reduce oxidative stress and battle unwanted inflammation. Mustard seeds contain phytonutrients with anti-cancer and anti-inflammatory powers. Once again #boom #foodismedicine ???? . . Carom. Also known as Ajwain or Ajowan seeds. My guess is if you don’t have an India connection you probably haven’t been exposed to it much. But no worries! I’m here to help you get your Carom on because, well, like all spices, this tiny seed is packed with some serious superpowers ???? . . ✨Carom enhances digestion by boosting pancreatic enzymes. It also reduces flatulence ?and the transit time of food in the digestive tract. I had Carom tea like it was going out of business after my C-section and trust me, it works to help ahem digestive issues. . . ✨Carom kills nasty bacteria and may even enhance the effectiveness of some antibiotics. . . ✨Carom could suppress excess appetite and help in obesity control. . . Lentils can be hard to digest for some so I decided to give these red lentil pancakes inspired by @thefamilyfoodproject and @healthylittlefoodies a hit of Carom seeds tempered in avocado oil with turmeric, onions, ginger and garlic (carom seeds can be bitter and pungent but this is mellowed out with heat and a good fat source). Red lentils soaked overnight were then blitzed with that spiced onion mixture, salt, pepper, lemon juice into a batter. Pan fried like pancakes in some more avo oil and topped with yogurt, cumin, cayenne and tamarind. Baby’s and mama’s lunch sorted ????. In fact, offering babies flavorful nutrition with herbs and spices can make for healthier, more adventurous eating for a lifetime. Let's shape those taste buds early on. This gently spiced turmeric lentil avocado puree is the perfect base to add in carrots, sweet potatoes, squash, cauliflower or really any veggie you have on hand. Or offer it to baby as is for a creamy and nutritious puree.

RECIPE In a food processor, blitz together 2 cups roasted and unsalted cashews, 1/4 cup oat flour, 1/4 cup honey, maple or @justdatesyrup, 1/4 tsp nutmeg, pinch of vanilla, and a pinch of sea salt. Press the dough into a loaf pan. Stud with chocolate chips and cranberries and dust with Ceylon cinnamon. Freeze for 2-3 hours. 🌿Coriander🌿Allow me to introduce one of my all time favorite, somewhat under appreciated spices - coriander 😍You’ve probably seen fresh coriander (or cilantro) leaves but have you ever smelled / eaten / cooked with coriander seeds?! I’m about to get you to do all of the above STAT. Let’s go🙌🏽👇🏽 . . 🌿Coriander’s use dates back to the 2nd century BC when it was cultivated in Asia and Southern Europe - random, cool historical fact: it only arrived in North America in the 1600s. 🌿It was traditionally used as a perfuming agent (one whiff and you’ll know why mmmm) and to help digestion (hence added to beans and lentils in traditional recipes). 🌿Coriander is a member of the parsley fam and is widely consumed in India (where it’s called dhania), East Asia, Morocco, Northern and Eastern Europe and Russia. 🌿Moroccan coriander seeds are smaller and Indian ones larger #spicenerd #factoftheday 🌿Coriander seeds have warm, woodsy, citrus and pepper notes.
