Roasted Carrot And Avocado Toast

Ingredients
Gluten Free Vegan Toast
Avocado, sliced
za'atar
fresh thyme
pistachios (optional)
To make roasted carrots:
1 lb of carrots
1 tablespoon coconut oil
1 tablespoon maple syrup
1 tsp salt
1/2 tsp ground black pepper
Directions:
Toss all ingredients together & roast them on a parchment lined baking sheet at 400F for about 35 mins, or until meltingly tender & beginning to caramelize.
To make the toast
Top the bread with the sliced avocado and smash (if desired). Sprinkle with za'atar, fresh thyme and pistachios. Top with roasted carrots and enjoy!
