Vegetarian Vietnamese Pho Broth

"RECIPE:

VEGETARIAN VIETNAMESE PHO BROTH:

1 whole onion
1 cinnamon stick
2-3 star anise
2 stalks of lemongrass
1 tbs peppercorns
2-inch piece fresh ginger root
2 cloves garlic
2 tbs soy sauce
2 tbs sesame oil
salt, juice of one lime


OTHER INGREDIENTS:

8-10 shiitake mushrooms
1 head bok choy
rice noodles
bean sprouts
cilantro
lime wedges
green onion and jalapeño (optional)


In a large pot boil water with onion, ginger, cinnamon stick, star anise, lemongrass, peppercorns, garlic.
Once it reaches a boil, cover and let it simmer for 35 min. Strain broth to remove all the cooked veggies, and return broth to the pot
•add salt, soy sauce, fish sauce, lime juice, shiitake mushrooms, bok choy and cook for another 3-5 min until vegetables are tender
•in another pot slightly undercook rice noodles in a boiling water ( about 1-3 min)
•add noodles to your bowl, add hot broth and cooked vegetables, garnish with cilantro, lime wedges, bean sprouts, green onions and sliced jalapeño.
