Vegetarian Vietnamese Pho Broth
RECIPE: <br><br> VEGETARIAN VIETNAMESE PHO BROTH: <br><br> 1 whole onion <br> 1 cinnamon stick <br> 2-3 star anise <br> 2 stalks of lemongrass<br> 1 tbs peppercorns <br> 2-inch piece fresh ginger root <br> 2 cloves garlic <br> 2 tbs soy sauce <br> 2 tbs sesame oil <br> salt, juice of one lime <br> <br><br> OTHER INGREDIENTS: <br><br> 8-10 shiitake mushrooms <br> 1 head bok choy <br> rice noodles<br> bean sprouts <br> cilantro <br> lime wedges <br> green onion and jalapeño (optional) <br> <br><br> In a large pot boil water with onion, ginger, cinnamon stick, star anise, lemongrass, peppercorns, garlic. <br> Once it reaches a boil, cover and let it simmer for 35 min. Strain broth to remove all the cooked veggies, and return broth to the pot <br> •add salt, soy sauce, fish sauce, lime juice, shiitake mushrooms, bok choy and cook for another 3-5 min until vegetables are tender <br> •in another pot slightly undercook rice noodles in a boiling water ( about 1-3 min) <br> •add noodles to your bowl, add hot broth and cooked vegetables, garnish with cilantro, lime wedges, bean sprouts, green onions and sliced jalapeño.<br> Enjoy!
