Cucumber and Mint Infused Vodka Cocktail (Ginger Rogers)

(3)
"This cocktail was a personal challenge. First, I’ve always been inspired by cucumber garnishes like this but to date I haven’t done it for some reason. Second, with temps approaching 80 I was craving a simple, crisp, clean cocktail using cucumber. Finally, I had to use vodka. I rarely use or drink it but every once in a while it works when you want the other ingredients to shine. Personally I love the combination of cool, refreshing cucumber and the sharp bite of ginger. Fresh pressed ginger would be ideal, but in lieu of that I used ginger liqueur. This one’s a keeper! You could also just muddle some cukes with the standard vodka of your choice to get a similar result.
