Skip the potatoes for carrots! These roasted carrot fries are just as good, if not better than regular fries. Serve them as a side for a healthier alternative.

ingredients
- 1 pound bag of carrots
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Method
Step 1
Preheat oven to 425°F. Wash & peel the carrots, cut in half then in half lengthwise to create thin “fries”.
Step 2
Make sure they all are around the same size so they cook evenly. Toss the carrots in with olive oil, salt, pepper, paprika and garlic powder and add to a parchment lined baking sheet. Roast for 25-30 minutes or until crispy making sure to flip halfway.
