ingredients
- 8 ounces sweet cherry tomatoes
- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 2 cloves garlic, finely minced
- 3 tablespoons fresh basil, chopped or julienned
- A good pinch of flaky sea salt to taste
- Freshly cracked black pepper to taste
Method
Step 1
Quarter the cherry tomatoes and add those along with all other ingredients into a small mixing bowl. Mix until everything is evenly combined, adjust the seasoning to your liking. Let marinate for at least 30 minutes before using so the tomatoes can release their juices.
Step 2
Use the juices released from the tomato bruschetta topping to dress a small salad using the greens of your choice, basil leaves, a bit of Parmesan and any leftover bruschetta tomatoes you may have.
Step 3
Top the pizza with the salad, sprinkle with Parmesan, drizzle with a little more olive oil and enjoy!
