You can add a touch of lemon zest or lemon juice to add a zing to the dish. You could also add vegetables such as potatoes and carrots to add additional a body to the dish."

ingredients
- 2 ounce ginger
- 3 ounce onion
- 4 clove garlic
- 2 tabelspoons vegetable oil
- 1 stick cinnamon
- 1 tabelspoons ground coriander
- 1 teaspoo cumin
- 1 teaspoo ground turmeric
- 1/2 teaspoo fennel seeds
- 32 ounce trimmed rack of lamb
- 1 red chili
- bunch of coriander leaves
- Salt and pepper to taste
Method
Step 1
Prepare the curry paste in a food processor by combining ginger, onions, and garlic.
Step 2
Add 11 fl oz of water and blitz until a smooth puree.
Step 3
Remove and transfer to a deep saute pan and simmer for 20 mins, stirring occasionally.
Step 4
Add the vegetable oil to the saute pan.
Step 5
Add the lamb, cinnamon, cumin, ground coriander, Tumeric, fennel seeds.
Step 6
Mix well and add 3 cups of water.
Step 7
Bring to simmer for 90 mins.
Step 8
Add salt and pepper to taste.
