ingredients

  • 1 1/2 cups dried chickpeas
  • 1/2 onion
  • 4 garlic cloves
  • 1 tablespoon olive oil
  • 1 handful cilantro
  • 2 handfuls parsley
  • 1 teaspoon salt
  • 1 1/2 teaspoons cumin

Method

  • Step 1

    Soak the dried chickpeas in water for 24h. Rinse soaked chickpeas and place in a food processor together with the rest of the ingredients.

  • Step 2

    Process until you get the right consistency, you want to be able to form a ball without the dough filling apart. You can add a bit of chickpea flour if needed. Place the dough in the fridge for 1h.

  • Step 3

    With a spoon, scoop small amounts of the dough and form balls using your hands. Place in an air fryer and cook for 20 minutes at 180C, flipping the falafels halfway. (I had to make 2 rounds to fit all the falafels in the air fryer).
