We love how crispy small potatoes get when they're roasted. With just a few simple spices, they taste out of this world, making for the easiest vegan and gluten free side dish we could ever ask for!

Serves or Makes: 2-4


  • 1 small bag multicolored potatoes, halved
  • 1 lemon, juiced
  • 1 1/ 2 tablespoons olive oil
  • 1 1/ 2 teaspoons red Thai curry
  • 1/ 2 teaspoon onion salt


  • Step 1

    Preheat the oven to 400ºF. Line a baking sheet with parchment paper.

  • Step 2

    In a large bowl, toss the potatoes with lemon juice, oil and spices. Once evenly coated, spread in a single layer on the prepared baking sheet.

  • Step 3

    Bake for 25 minutes.
