ingredients

  • 1 sheet of puff pastry
  • 3 zucchinis, thinly sliced
  • 1 8 ounce log of goat cheese
  • zest of one lemon
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • chopped fresh basil
  • salt, to taste
  • black pepper, to taste
  • handful of pine nuts

Method

  • Step 1

    Preheat oven at 350F. In a bowl mix the goat cheese (room temperature) with mustard, olive oil, basil.

  • Step 2

    Score 1” around the puff pastry. Spread cheese mixture into the puff pastry. Arrange zucchinis on top. Drizzle olive oil and season. Sprinkle with pine nuts.

  • Step 3

    Bake for 30 minutes or until the crust is golden brown!
