Brownies

ingredients

  • 1/2 cup oat flour
  • 1/2 cup chocolate chips
  • 1/2 cup unsweetened milk of choice
  • 1/2 cup plain Greek yogurt
  • 1/3 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1 large egg or flax egg (for a flax egg, mix 1 tablespoon ground flaxseed with 3 tablespoons water and let it sit for a few minutes until it thickens)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Ganache

ingredients

  • 1/4 cup cocoa powder
  • 1 tablespoon stevia (or preferred natural sweetener)
  • Pinch of salt
  • 3 tablespoons water

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a microwave-safe bowl, combine chocolate chips and milk. Microwave in 20-second intervals until melted, stirring between each interval.

  • Step 3

    Mix in Greek yogurt, egg (or flax egg), and vanilla extract.

  • Step 4

    In a separate bowl, whisk together oat flour, cocoa powder, coconut sugar, baking powder, and salt.

  • Step 5

    Fold the dry ingredients into the wet ingredients until well combined.

  • Step 6

    Pour the batter into a greased or parchment-lined baking dish.

  • Step 7

    Bake for 15-20 minutes or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).

    While the brownies are baking, prepare the ganache. In a small saucepan over low heat, combine cocoa powder, stevia, salt, and water. Stir continuously until smooth and well combined. Remove from heat.

    Once the brownies are done baking, let them cool in the pan for at least 10 minutes before transferring them to a wire rack to cool completely.

    Once the brownies are completely cooled, spread the ganache evenly over the top.

    Allow the ganache to set before slicing the brownies into squares.
