- 1 8 oz bag fresh spinach
- 1 14 ounce can cannellini beans
- 1/ 2 shallot, chopped
- 2 tablespoons Olive Oil
- 1 garlic clove, minced
- 1 medium tomato, diced
- Salt and freshly ground pepper to taste,
Add olive oil, garlic and, chopped onion to a pan over medium heat and sauté for 2 minutes.
Once spinach starts to wilt, add cannellini beans. Season with salt and pepper. Stir occasionally for 3-5 minutes.
Remove from heat once beans are warmed and spinach has been sautéed. Serve warm with desired toppings.
