Throw this spinach salad together when you're in a rush- customizable to your liking; try adding crispy bacon, your favorite roasted vegetables, a squeeze of lemon, and parmesan cheese. Also, this would be great with a sunny-side-up egg for breakfast.

ingredients

  • 1 8 oz bag fresh spinach
  • 1 14 ounce can cannellini beans
  • 1/2 shallot, chopped
  • 2 tablespoons Olive Oil
  • 1 garlic clove, minced
  • 1 medium tomato, diced
  • Salt and freshly ground pepper to taste,

Method

  • Step 1

    Add olive oil, garlic and, chopped onion to a pan over medium heat and sauté for 2 minutes.

  • Step 2

    Once spinach starts to wilt, add cannellini beans. Season with salt and pepper. Stir occasionally for 3-5 minutes.

  • Step 3

    Remove from heat once beans are warmed and spinach has been sautéed. Serve warm with desired toppings.
