For The Pico de Gallo

ingredients

  • 1 lime, juiced, or more as needed
  • 2 cups red and yellow cherry tomatoes, halved
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon Kosher salt

For the Toast and Assembly

ingredients

  • 2 slices of crusty, multi-grain bread, 1/2-inch thick
  • 1 medium avocado, sliced
  • 1/4 teaspoon Kosher salt
  • pinch of crushed red pepper flakes
  • radishes, for garnish, thinly sliced

Method

  • Step 1

    For the pico de gallo, combine all of the ingredients together in a medium mixing bowl. Stir to combine, set aside.

  • Step 2

    Toast bread to desired doneness. Layer toast generously with avocado slices and sprinkle with salt and red pepper flakes. Add thinly sliced radishes over the avocado layer. Top the toast with pico de gallo. Enjoy!
