Fava Bean Curry

"Those Fava Beans - Done I soaked the beans overnight and then pressure cooked them together with salt and asafoetida. I cooked in seasoned mustard oil and tempered it with mustard seeds, curry leaves, green chillies and red onions. I added in only red chilli powder and that garam masala powder, that my mamma @neelam.diddee makes; to flavour. I added in fresh coriander, the cooked beans; along with the water they were cooked in and simmered along with kokum. I finished with coconut milk. So yummy to slurp away bowlfuls, despite the heat. "

RECIPE:

Ingredients :
1. Dried Fava Beans - 1 cup, soaked overnight
2. Salt - to taste
3. Asafoetida - a generous pinch
4. Mustard oil - 2 tbspns
5. Mustard seeds -1/2 tspn
6. Curry leaves - 2 sprigs
7. Green chillies - 4, sliced fine
8. Red onions - 2, medium, chopped fine
9. Red chilli powder - 1 tspn (as per tolerance)
10. Garam masala powder - 1/2 tspn
11. Fresh cilantro/coriander  - a fistful, chopped
12. Indica Garcinia extract /tamarind pulp - 3 tbspns
13. Coconut milk - 200 ml

Method:
1.  Pressure cook the soaked fava beans after rinsing them with salt and asafoetida.
2. Heat the mustard oil and when it smokes, temper it with mustard seeds, curry leaves, green chillies and red onions.
3. Add in the red chilli powder, garam masala powder, fresh coriander, the cooked beans; along with the water they were cooked in and simmered along with Indica Garcinia /tamarind extract.
4. Add in the coconut milk and allow to simmer.
So tasty to eat along with fresh steamed rice or just on its own!
