There's nothing like a great cheeseburger, especially when it comes from The Little Nell's Ajax Tavern in Aspen, Colorado! We visited them for the Food & Wine Classic earlier this summer and enjoyed a few of these Ajax Double Wagyu Burgers on their epic patio ovelooking Aspen Mountain. Serve them with a side of truffle fries and a cold beer for the perfect summer meal!
- For the Dub Sauce:
- 64 grams garlic, minced
- 5 grams kosher salt, plus more to taste
- 170 grams Best Foods or homemade mayonnaise
- 57 grams Heinz chili sauce
- 20 grams minced onion
- 25 grams sweet pickle relish
- Freshly ground black pepper
- For the Burger:
- 4 3 oz ground Wagyu patties
- Shredded romaine lettuce
- Sliced ripe tomatoes
- 2 Brioche buns
- 4 slices American cheese
- Best Foods or homemade mayonnaise for bun
- Dub sauce
Place all sauce ingredients in a mixer with whip attachment and mix well. Season with salt and pepper to taste.
Prep toppings. Season burgers with salt and fresh cracked pepper.
Cook in cast iron skillet to desired temperature. Place one slice of cheese on each burger to melt. Spread mayo on the brioche bun and toast.
To assemble, spread Dub Sauce on the bottom toasted bun. Then, place the two cheeseburger patties topped with lettuce, tomato, and the top bun. Wrap in paper if desired.
