We held a workout class @ FeedfeedBrooklyn with our friends at MaraNatha & had the most fun making our post-sweat snacks! One of the biggest hits was our DIY Sweet Potato Bar. The big question was: sweet or savory? But one thing we all agreed on was that a creamy drizzle of MaraNatha nut butters took these sweet potatoes to the next level! Here's to a Healthy & Happy New Year in 2019!
- 6 sweet potatoes, halved
- Salt and pepper, To Taste
- Extra virgin olive oil, as needed
- Assorted MaraNatha Nut Butters
- mixed berries
- toasted coconut flakes
- scallions, sliced
- sesame seeds
- hemp seeds
- chocolate chips
Preheat oven to 400˚F. Arrange sweet potatoes cut side down on a baking sheet. Drizzle with olive oil and season with salt and pepper to taste.
Bake for 30 minutes and let cool slightly before adding desired toppings. Get creative! We love using things like mixed berries, popcorn, granola, toasted coconut flakes, scallions, sesame seeds, hemp seeds and chocolate chips.
