On Tuesday,  super hearty pulled jackfruit pasta will be sure to fill you up with leftovers as a bonus.. On Wednesday and Thursday night, lighten up with a roasted cauliflower salad and quinoa bowls dressed in a delicious tahini dressing.  This wonderful tahini iced latte will get you in the mood for the weekend.

Sunday Prep: Prep a double batch of the wild rice on Sunday. Fill this rice salad with any vegetables you have on hand and feel free to add your favorite protein! This salad will come in handy for quick lunches during the week. 

Monday:  Wild Rice with Sweet Potato, Shallots, Spinach and Mushrooms 
Tuesday: Miso Pulled Jackfruit Pasta with Mushrooms and Spinach
Wednesday: Roasted Cauliflower Salad with Creamy Tahini Dressing 
 Thursday: Quinoa Bowl With Greens And Maple-Tahini Dressing

Friday: Keep it simple at the end of the week and mix and match any leftovers on Friday night. Use any grains or veggies in bowls, salads, wraps, or soups!
