For the Dressing
ingredients
- 1/4 cup tahini
- 1 lemon, juiced
- 1 tablespoon maple syrup
- 1 tablespoon tamari
- 1 teaspoon apple cider vinegar
- 1 teaspoon mirin
- Kosher salt, to taste
- Black pepper, to taste
For the Quinoa Bowl
ingredients
- 3 cups cooked quinoa
- 2 cups sauteed greens
- 1/2 ripe avocado, sliced
- Fresh herbs, for garnish
Method
Step 1
Make the dressing. Whisk all ingredients in a medium bowl until well combined and emulsified. Season with salt and pepper, to taste.
Step 2
Spoon some quinoa into a bowl, top with sauteed greens and sliced avocado. Garnish with fresh herbs and drizzle with maple-tahini dressing.
