Spring is in full swing, the days are slowly getting longer and the temps are rising as we inch closer and closer to summer. We start this week off with a light Penne Primavera and then an Italian Fennel Orange Salad on Tuesday. Add salmon, shrimp or chicken to complete the meal as a dinner salad. On Wednesday night build your own chicken sandwiches and if you're feeling up for it prep the chicken pot pie filling with any additional chicken.
