Spring is in full swing, the days are slowly getting longer and the temps are rising as we inch closer and closer to summer. We start this week off with a light Penne Primavera and then an Italian Fennel Orange Salad on Tuesday. Add salmon, shrimp or chicken to complete the meal as a dinner salad. On Wednesday night build your own chicken sandwiches and if you're feeling up for it prep the chicken pot pie filling with any additional chicken. This week's weekend bonus recipe is a rhubarb ginger and sherry cocktail perfect for sipping in the sun and enjoying the weekend!

Prep:  No prep work this week! Most of these recipes can be made the day of, but if you're looking to get ahead on dinner you can make the pastry dough and filling for the chicken pot pie a day or two in advance. By the time Thursday rolls around you'll only need to assemble and bake!
