Mother’s Day should be every day in my opinion! However, we do set aside one day a year to shower our moms with even more affection and food than normal. This year, I’ve put together a brunch spectacular, all meant to be served in bed. These are the perfect treats to serve right in bed, no movement required. So, fire up the oven and stove top and show your mom exactly how much you appreciate and love her!

No brunch-in-bed is complete without eggs! This spicy shakshuka is a one pan wonder. Layers of melted onions, warm spices and chickpeas make up the base for the baked eggs to nestle in.
This recipe is a great one to involve the kids! These soft and fluffy Belarussian style pancakes have a great tang from the addition of yogurt. They’re also egg free if you’re low on eggs! Top with your favorite jam or jelly and serve it straight to Mom.
The beautiful thing about this recipe (besides the final product) is it looks like you put hours of work into this gorgeous pie, when really, it comes together in under 1 hour! It uses store bought phyllo dough, frozen spinach and feta cheese to create a crispy, rustic main dish that will have your Mom wondering when you went to culinary school.
