There's just something about cupcakes. I have gone to countless birthday parties, baby showers, graduations and when given a slice of layer cake, I'm honestly disappointed. It might be my aversion to icing - and especially with regular layer cakes the icing encases it and is in between the sponge (seriously, you can't get away from it!) but with a cupcake; church and state. I can control my icing intake and the ratio is just BETTER. When asked to make a list of some of our top delicious cupcake recipes for you all, I had only one mission- compile recipes with interesting flavors, the classics and the aspirational.
What are some of our tips for making the best cupcakes? Cooling the mini joys of love before frosting is your number one concern, but let's add on one little tidbit: don't forget to use ice cream scoops for equal distribution of batter! Feeling inspired? Good! ANY cake recipe can be used to make cupcakes. Don't feel intimidated to use only 'cupcake' recipes, the only thing you need to pay attention to is the baking time, which will be shorter, and you may want to up the leavener if you want a little dome at the top of your cupcake. Finally, INFUSE! Don't be afraid to inject as much flavor as you can: lavender, caramel, browned butter, rum, citrus, berries, you name it, step out of the vanilla and chocolate shadows and take a walk on the wildside.
