These protein and veggie packed vegan meatballs are topped with a delicious tangy tahini soy sauce. Serve with a side of rice and veggies for a complete meal.

Meaballs

ingredients

  • 1 block extra firm tofu
  • 1 carrot, shredded
  • 1 zucchini, shredded
  • 1/4 capsicum, thinly diced
  • 1/2 onion, thinly diced
  • 1 tablespoon minced fresh ginger
  • 3-4 garlic cloves, minced
  • 2 spring onions stalks, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 cup all purpose flour
  • 1/2 cup panko bread crumbs
  • Oil for brushing

Tangy sauce

ingredients

  • 4 tablespoons tahini
  • 3 tablespoons tamari or soy sauce
  • 2 sesame seeds
  • Juice of 1 lime
  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon chilli oil

Method

  • Step 1

    Preheat oven into 200c. Mix all ingredients for the meatballs in a large bowl, make sure is well combined, make sure is firm enough so it can hold little balls, adding more flour or liquid if needed.

  • Step 2

    Create little balls and place them in a lined baking tray, brush oil on top and transfer to the oven for 40min, flipping around halfway through.

  • Step 3

    Meanwhile prepare the sauce, in a jar place all the ingredients and shake throughly, set aside. Serve meatballs with rice, and pour sauce on top! Enjoy!
