ingredients

  • 90 gram Unsalted butter
  • 85 gram Powdered sugar
  • 2 Large egg whites
  • 85 gram Cake flour
  • 10 gram Matcha powder
  • 1/8 teaspoons Salt
  • Mini marshmallows
  • White chocolate

Method

  • Step 1

    Let the butter come to room temperature and cream it with the powdered sugar until the sugar is completely dissolved.

  • Step 2

    Slowly mix the egg whites into the butter and sugar mixture. Mix until completely combined

  • Step 3

    In another bowl sift together the flour, matcha powder, and the salt. Add 1/3 of the dry mixture into the butter and sugar mixture and fold until there are no streaks of flour left. Repeat until all the dry ingredients are mixed in.

  • Step 4

    Transfer the mixture into a piping bag with a small round tip and pipe 1 inch rounds that are about half an inch apart onto a baking sheet lined with parchment paper.

  • Step 5

    Bake at 350 degrees f for 5-7 minutes.

  • Step 6

    Option decorating step: after the cookies have cooled, use white chocolate to dry tiny white circles on the cookies. Then use the white chocolate to stick a mini marshmallow on the bottom of the cookie to resemble a mushroom.
