Slow Cooker BBQ Chicken Quesadillas

ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/4 cup Italian dressing
  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • Mexican blend shredded cheese or your choice of shredded cheese
  • Large flour tortillas

Method

  • Step 1

    Place chicken breasts in your crockpot.

  • Step 2

    In a mixing bowl combine BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Stir until well combined.

  • Step 3

    Pour over chicken, cover and cook on HIGH for 3-4 hours.

  • Step 4

    Shred chicken with 2 forks and place back into crockpot with sauce for about 10 minutes to soak up all of the flavor.

  • Step 5

    Meanwhile, on medium-high heat, spray pan with cooking spray. Place a large flour tortilla in the frying pan, add shredded cheese. Making sure it is evenly spread.

  • Step 6

    Cover half of the tortilla with the BBQ chicken (the amount is up to you, whether you want a lot of meat or less). Flip the half of the tortilla covered with cheese over onto the BBQ chicken side.

  • Step 7

    Once cheese is melted and the BBQ chicken is warm, transfer to a cutting board. Cut into 3-4 triangles.

  • Step 8

    Serve with sour cream, salsa, guacamole or whatever you'd like! Enjoy!

NOTES

  • Step 1

    Another way to cook the quesadilla would be to place a tortilla in the frying pan, add shredded cheese and BBQ chicken. Spreading evenly over the entire tortilla. Place another tortilla over the top. Let the bottom tortilla brown and the cheese melt then flip to brown the other side. This way you will end up with 6-8 smaller triangles.
