ingredients

  • 3 cups water
  • 1 cup jasmine rice
  • 4 cups milk
  • 1 1/2 cups sugar
  • 3 tablespoon cornstarch
  • 2 egg yolks
  • 1 tablespoon vanilla
  • whipped cream for garnish
  • cinnamon for garnish

Method

  • Step 1

    In a large saucepan bring the water to a boil. Add rice. Turn heat to low or simmer, cover and let rice cook for 15 minutes.

  • Step 2

    In a small bowl separate 2 eggs, preserving the yolks.

  • Step 3

    Turn heat back up to medium high. Add milk, sugar and corn starch to the rice and water mixture. Stir constantly until mixture thickens.

  • Step 4

    Temper (add rice mixture to egg yolks a little at a time to avoid scrambling the eggs) the egg yolks. Add to rice mixture in saucepan. Add vanilla. Continue stirring until combined.

  • Step 5

    Put into small ramekins and serve warm or place in refrigerator for a few hours to set. When ready to serve garnish with whipped cream and a dash of cinnamon!

  • Step 6

    NOTES **THIS RICE PUDDING IS VERY SWEET! You can add a couple tablespoons of cocoa powder to the pudding to cut down the sweetness**
