White Nectarine, Peach And Apricot Galette

  • Pie Crust:
  • 1 cup plain flour
  • 1/ 4 cup whole wheat flour
  • 2 tablespoon sugar
  • 6 tablespoon butter
  • 1 beaten egg + enough cream to reach 1/3 cup
  • Filling:
  • 2 each white nectarines
  • 2 each peaches
  • 3 each Apricots
  • 2 tablespoon sugar
  • A generous squeeze of lemon


  • Step 1

    Mix flour, sugar and butter in food processor until it reaches the consistency of breadcrumbs. Add egg and cream mixture, continue mixing until the dough forms a ball. Wrap in cling film and refrigerate.

  • Step 2

    Cut up the fruit, mix with sugar and lemon juice. Roll out dough to a circle, arrange fruit on crust, fold in the sides. The border may be brushed with egg wash if desired.

  • Step 3

    Bake at 400F (200C) for 30-40 minutes until pastry is golden and crisp and the fruit cooked. Best served with good quality vanilla ice cream.
