Blondie Mix
ingredients
- 1/2 cup butter
- 8 ounces white bakers chocolate
- 1/4 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/4 cup gluten free baking flour
Blondie Mix
Method
Step 1
Preheat oven to 350. Roughly chop white chocolate, add to bowl with butter. Heat in microwave until melted in 25 second intervals.
Step 2
Add sugars and vanilla to melted chocolate. (pinch of salt if you'd like!) Mix to combine.
Step 3
Add eggs, whisk with hand mixer until well combined.
Step 4
Continue whisking, add flour. Whisk on low until no clumps remain.
Step 5
Gently layer with peaches, and crumble topping. Bake for 25-35 minutes, until golden brown. (toothpick comes out clean!)
Peach Cobbler "filling"
ingredients
- 4 yellow peaches
- 1/2 tablespoons lemon juice
- 2 tablespoons corn starch
- 2 tablespoons brown sugar
- 1 vanilla bean

Step 1
Peel and slice peaches. Add to bowl with all other ingredients. Toss to combine.
Crumble Topping
ingredients
- 3/4 cup brown sugar
- 1/2 cup gluten free baking flour
- 3 tablespoons butter
- 1 teaspoon cinnamon
Crumble Topping
Step 1
Combine dry ingredients in food processor.
Step 2
Dice butter, add to dry ingredients. Pulse to create pea sized bits.
