ingredients
- 1 English cucumber, thinly sliced
- 2 to 3 tablespoons plant-based cream cheese
- A few thin slices of onion (red or white)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Fresh or dried dill, to taste
- 1 teaspoon apple cider vinegar (or white vinegar)
- 1/2 teaspoon agave (optional)
- Drizzle of olive oil (optional)
Method
Step 1
Slice the English cucumber into thin rounds or half-moons. Thin slices work best for absorbing flavor.
Step 2
In a bowl, combine the vinegar, a pinch of salt, a few cracks of black pepper, dill, and agave (if using). Whisk in olive oil if you’d like a richer dressing.
Step 3
Add the cucumbers and onions to the bowl and toss to coat evenly.
Step 4
Spread a little plant-based cream cheese on each cucumber slice or serve it on the side as a dip. Top with extra dill and a crack of pepper for garnish.
