"Biko is one of my favorite Filipino desserts! It’s a sweet rice cake made with coconut milk and brown sugar. Biko is traditionally placed over banana leaves and garnished with “latik” which is coconut curds. Today, I’m using shredded coconut pieces instead of Latik but trust me, it’s still very delicious! Biko is typically enjoyed during special occasions or the holidays!"

- 1 1/2 cups U.S.-grown medium grain rice
- 2 1/2 cups coconut milk
- 1 1/2 cups brown sugar
- Coconut flakes, for topping
Method
Step 1
Cook U.S.-grown medium grain rice according to the package.
Step 2
In a pan, cook coconut milk and brown sugar on medium-low heat. Stir to prevent sugar from burning.
Step 3
Cook down until the sauce is caramelized. Turn the heat off.
Step 4
Remove ¾ cup of sauce and set aside.
Step 5
Add cooked rice to the pan and mix with the remaining sauce.
Step 6
Add rice mixture to a baking dish and spread evenly.
Step 7
Add ½ cup of remaining sauce on top.
Step 8
Let the rice cake set for 10 minutes, then add coconut flakes on top.
