"Fresh ginger and molasses cake topped with orange cream cheese frosting and gingery sugared cranberries. Ginger cakes always make me think of the holidays so when I saw this recipe in Salt, Fat, Acid Heat by @ciaosamin I knew I had to pair it with sugared cranberries for a wintery effect. This cake packs major ginger flavor from puréeing one cup of fresh sliced ginger with sugar. The cake also has a full cup of molasses and includes a trio of warm spices including ginger, cinnamon, and cloves. The house smelled like Christmas as it baked in the oven and with the first bite I knew this is a recipe I’ll be making again during the holidays.
