ingredients
- 1 cup RiceSelect® Royal Blend® Rice
- 2 tablespoons Neutral cooking oil, divided
- 4 cloves garlic, minced
- 3 green onions, chopped (white and green parts separated)
- 2 large eggs, beaten
- 1/2 yellow onion, chopped
- 1/4 kabocha squash, diced
- 1 cup frozen mixed vegetables
- 1 1/2 cups water
- 3 tablespoons soy sauce
- 1 teaspoon kosher salt
- 1 teaspoon white pepper
- 1 whole kabocha quash (optional), for serving
Method
Step 1
Prepare the RiceSelect® Royal Blend® Rice according to package directions and set it aside.
Step 2
Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
Step 3
Add the minced garlic and white parts of the green onions, sautéing until fragrant (about 1 minute).
Step 4
Pour in the beaten eggs and scramble until fully cooked, around 2-3 minutes. Transfer to a plate and set aside.
Step 5
In the same pan, heat another tablespoon of oil. Add the chopped onion and diced kabocha squash, stir-frying for 2-3 minutes until the pumpkin is tender. Add the frozen vegetables and stir to combine.
Step 6
Stir in the cooked rice and scrambled eggs. Add the soy sauce, salt, and white pepper, tossing everything together. Stir-fry for another few minutes until the rice is slightly crispy and dry. Adjust seasoning to taste.
Step 7
Stir in the green parts of the green onions and mix well.
Step 8
Serve the fried rice hot, optionally in a roasted kabocha pumpkin bowl.
