  • 3 1/3 cups (425 grams) all-purpose flour, plus more for rolling
  • 1 tablespoon baking powder
  • 2 1/2 teaspoons kosher salt
  • 3/4 cup (170 grams) cold unsalted butter, cut into small cubes
  • 1 1/4 cups (300 grams) cold buttermilk
  • 1 large egg, beaten with 1 tablespoon of water for egg wash
  • Flakey sea salt, for sprinkling on top

Method

  • Step 1

    Preheat the oven to 375°F.

  • Step 2

    In a large bowl, whisk together the flour, baking powder, and salt.

  • Step 3

    Add the cold butter to the flour mixture. Use a pastry cutter or fingers to work the butter into the flour until the mixture resembles coarse crumbs.

  • Step 4

    Make a well in the center of the mixture and pour in the cold buttermilk. Stir until just combined. The dough will be sticky.

  • Step 5

    Turn the dough out onto a floured surface and knead it gently a few times until it comes together. Pat the dough into a rectangle about 1 inch thick.

  • Step 6

    Use a floured biscuit cutter to cut out biscuits. Place them on a baking sheet lined with parchment paper.

  • Step 7

    Brush the tops of the biscuits with the egg wash and sprinkle with flaky sea salt.

  • Step 8

    Bake for about 35 minutes, or until the biscuits are golden brown. Serve warm.
