- 3 1/3 cups (425 grams) all-purpose flour, plus more for rolling
- 1 tablespoon baking powder
- 2 1/2 teaspoons kosher salt
- 3/4 cup (170 grams) cold unsalted butter, cut into small cubes
- 1 1/4 cups (300 grams) cold buttermilk
- 1 large egg, beaten with 1 tablespoon of water for egg wash
- Flakey sea salt, for sprinkling on top
Method
Step 1
Preheat the oven to 375°F.
Step 2
In a large bowl, whisk together the flour, baking powder, and salt.
Step 3
Add the cold butter to the flour mixture. Use a pastry cutter or fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Step 4
Make a well in the center of the mixture and pour in the cold buttermilk. Stir until just combined. The dough will be sticky.
Step 5
Turn the dough out onto a floured surface and knead it gently a few times until it comes together. Pat the dough into a rectangle about 1 inch thick.

Use a floured biscuit cutter to cut out biscuits. Place them on a baking sheet lined with parchment paper.
