ingredients
- 250 grams all purpose flour
- 10 grams baking powder
- Pinch of pink Himalayan salt
- blue spirulina powder
- 300 millileters plant-based milk (I used almond)
- 1 tablespoon apple cider vinegar
- vanilla extract
Method
Step 1
Start by adding the milk and vinegar in a measuring cup. Whisk and let the mixture sit for 5 minutes. In a large bowl mix together flour, baking powder, sugar and salt.
Step 2
Pour over the milk-vinegar mixture and the vanilla extract and whisk well. Heat up a non-stick pan and start cooking your pancakes for about 1 minute on each side.
Step 3
Leave the first 2 pancakes plain, then start adding blue spirulina powder to the batter, a little bit at a time after each 2 pancakes (to achieve the ombre effect). Make sure you cook your pancakes on low heat, because spirulina is heat sensitive and you don’t want it to lose its pigment.
