Recipe Card

For the BBQ sauce

ingredients

  • 1 (10 oz) can Tomato Love Mild Diced Tomatoes + Green Chilies
  • 1/2 cup ketchup
  • 2 tablespoons worcestershire sauce
  • 1/4 cup apple cider vinegar
  • 1/3 cup water
  • 1 tablespoon dry mustard
  • 2 tablespoons brown sugar
  • 1 tablespoon molasses
  • 1 tablespoon paprika
  • 1 tablespoon dried onion
  • 1 teaspoons garlic powder
  • Kosher Salt, to taste.
  • Black Pepper, to taste.

For the board:

ingredients

  • Chicken drumsticks
  • Smoked sausages
  • Asparagus
  • Mini bell peppers
  • Baby bella mushrooms
  • Sliced Baguette
  • Corn on the cob
  • Kosher Salt, to taste.
  • Black Pepper, to taste.
  • 2 tablespoons olive oil

  • Pickled red onion
  • Cheese
  • Olives

To make the BBQ sauce:

Method

  • Step 1

    In a medium sauce pan, combining Tomato Love Diced Tomatoes + Green Chiles, ketchup, Worcestershire sauce, apple cider vinegar, water, mustard, brown sugar, molasses, paprika, onion, garlic powder, salt, and pepper and stir to combine.

  • Step 2

    Bring sauce to a simmer and let cook down for 10 minutes. Use an immersion or regular blender to puree until smooth. Set aside

To prepare the board:

  • Step 1

    Take vegetables and baguette slices and season with 1 tbsp. Of oil, and ½ tbsp. Salt and ½ tsp. Black pepper and toss to coat.

  • Step 2

    Season drumsticks with the remaining oil and salt and pepper and toss to coat.

  • Step 3

    Preheat a grill to medium high heat and add chicken drumsticks and sausages and cook until chicken is cooked through and sausages are charred.

  • Step 4

    Add vegetables to the grill and cook for 5 minutes per side.

  • Step 5

    Baste chicken with some of the homemade BBQ sauce and cook for another two minutes. Note: At this time add the baguette slices and cook for 1-2 minutes per side.

  • Step 6

    Remove everything from grill.

  • Step 7

    Assemble board by adding extra BBQ sauce, pickles, olives, onions, and cheese and then layer in proteins and veggies.

  • Step 8

    Serve immediately.
