Crust

ingredients

  • 195 grams gluten free buckwheat flour
  • 40 grams almond flour
  • 85 grams sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 150 grams vegan butter
  • 1 tablespoon maple syrup mixed with water, to brush

Filling

ingredients

  • 5-6 apples, cut into small pieaces
  • 4 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • pinch of salt

Method

  • Step 1

    Preheat oven to 200ºC (392ºF)

  • Step 2

    Combine spices and syrup in a large bowl with apples and mix until fully coated.

  • Step 3

    Make the crust. Mix dry ingredients in a large bowl. Add vegan butter and knead dough until it's firm and doesn't crumble apart. Press 2/3 of the dough into a baking tin. Chill the remaining dough in the freezer if needed.

  • Step 4

    Fill the crust with the spiced apples. Using a rolling pin, roll the reserved dough over a floured surface into a circle big enough to cover the baking tin. If the dough is too sticky, let chill in the freezer for a few minutes.

  • Step 5

    Place the dough on top of the apples. Using a knife or fork, make small holes in the center of the top crust.

  • Step 6

    Brush the pie with the syrup and water mixture. Bake for 35-40 minutes or until crust is crispy and brown.

  • Step 7

    Serve with ice cream or whipped cream as desired.
