ingredients
- 1 (14.5 ounce) can Muir Glen Petite Fire Roasted Green Tomatoes
- 2 cups fresh corn (kernels from about 2 small ears of corn)
- 1 block (8 ounces) cream cheese, at room temperature
- 1 cup sour cream
- 2 cups chopped rotisserie chicken
- 8 ounces jalapeños, diced
- 6 ounces shredded cheddar cheese, divided
- 1-2 tablespoons taco seasoning
- Kosher salt, to taste
Method
Step 1
Preheat oven to 400°F.
Step 2
Combine all ingredients in a bowl. Reserve 2 ounces of shredded cheddar cheese and set aside. Mix well and pour into a cast iron skillet.
Step 3
Bake for 15 to 20 minutes until cheese is melted and bubbling.
Step 4
Serve with chips or use as a filling for tacos.
