ingredients

  • 1 (14.5 ounce) can Muir Glen Petite Fire Roasted Green Tomatoes
  • 2 cups fresh corn (kernels from about 2 small ears of corn)
  • 1 block (8 ounces) cream cheese, at room temperature
  • 1 cup sour cream
  • 2 cups chopped rotisserie chicken
  • 8 ounces jalapeños, diced
  • 6 ounces shredded cheddar cheese, divided
  • 1-2 tablespoons taco seasoning
  • Kosher salt, to taste

Method

  • Step 1

    Preheat oven to 400°F.

  • Step 2

    Combine all ingredients in a bowl. Reserve 2 ounces of shredded cheddar cheese and set aside. Mix well and pour into a cast iron skillet.

  • Step 3

    Bake for 15 to 20 minutes until cheese is melted and bubbling.

  • Step 4

    Serve with chips or use as a filling for tacos.
